Fluffy chapati with spicy Sabzi
Easy chapati wrap
makes 5 - 8 wraps
260 grs of whole grain wheat flour
240 ml lukewarm water
1 tsp ghee (optional)
Take a large sized bowl. Put 260 grs of wheat flour along with 120 ml of water and add ghee in it. Mix it well and start kneading the dough with your fingers in a circular motion. Keep adding water bit by bit till you get a good consistency . Make sure that the dough is neither too hard nor too soft. Divide the dough into 5-8 small balls.
Take one ball and flatten it, using a rolling stick. Keep using the flour in order to prevent the rolls from sticking to the surface. Continue till the chapati gets a round shape. Heat the pan enough and put the chapati on the pan. Cook on both sides. Use a pair of tongs to flip over to the other side. Keep the flame to medium as too much heat might burn the chapati. Once the chapati will start to puff, it is indicating that it's completely cooked.
Transfer to a closed container.
120 grs chopped green beans (very small pieces)
120 grs chopped sweet potatoes (very small pieces)
½ tsp cumin seeds
1 tsp.coriander powder
¼ tsp turmeric powder
salt as per taste
Heat oil in a non stick pan over moderate flame and add cumin seeds. Once the cumin seeds turn slightly golden in colour, add turmeric powder and coriander powder. Stir the ingredients for few seconds and then immediately add washed beans with sweet potatoes and add salt. Cover the vegetables with a lid for 10-15 minutes or until the vegetables become soft.
Once done transfer the sabzi to a bowl. Place one chapati on a flat plate. take 2-3 tablespoons of sabzi and place it on the chapati. Roll the chapati around the sabzi and the wrap is ready to eat.
If you are travelling you can wrap it in an aluminium foil. "Eet smakelijk!"
