Basic Dal Masala is an organic and raw spice mixture made from turmeric (haldi, curcuma), ginger, coriander, cumin, chili, cloves, cardamom, nutmeg, pepper, fenugreek and cinnamon. It is mainly used for seasoning dal soups and other dal dishes, but the possibilities are endless.

Briefly roast the masala in ghee (or coconut oil or olive oil) to intensify the flavour and add at the end, or just add it during the cooking process.

Dal (also called dahl, daal or dhal) is made from legumes, vegetables and herbs. Lentils, chickpeas, split peas, mung beans or red beans are being used. You can use legumes and vegetables that are beneficial for the Vata, Pitta, or Kapha dosha.

Dal dishes are easy to prepare. The legumes are boiled in water with some salt and the Dal Masala (optionally roasted in ghee). Some legumes need to be soaked in water for several hours (or overnight), depending on the variety. Depending on the amount of water added, the dal is cooked into a soup or a more solid dish. The dish is often combined with various vegetables. You can serve it with rice and, for example, types of bread such as roti, chapati or naan.
