Jaggery unrefined cane sugar is more than an ordinary sweetener. Jaggery is often used in Indian, Sri Lankan and Pakistani cuisine. But not just in the kitchen: also in the home pharmacy!
Sugar is seen as unhealthy these days. Refined sugars are added to many ready-to-eat products, which can contribute to many diseases. Yet you cannot generally consider sugar to be bad. This depends on two factors. The first has to do with the quality of the sugar itself, and the second has to do with the state of one's health.
Jaggery, unlike regular table sugar, is unrefined. It is made from sugar cane juice. This juice is reduced until it starts to caramelize and forms into large blocks. The blocks are then ground. This is called jaggery. The color is light brown and the taste is caramel-like due to the sugar cane molasses. Due to the method in which jaggery is made, it still contains many important minerals and vitamins, including zinc, selenium, folic acid and iron.
Viewed from an Ayurvedic perspective, Jaggery is the healthiest sugar for people with a vata constitution or vata related complaints. You can add Jaggery to hot or cold drinks, to savory dishes (such as curries) or as a substitute for regular sugar, such as in chutneys, desserts or pastries.
