Potato-leek soup


You have probably made potato-leek soup before, but have you ever added fennel seeds? Fennel has both cooling and warming properties: it stimulates appetite and ensures good digestion. If you have eaten too much or if your food was a little too spicy, fennel ensures that you do not feel bloated. Fennel is also a remedy for heartburn, nausea and other digestive problems.



  • 1,5 litre water

  • 4 potatoes, peeled and cut in small cubes

  • 3 thin or 2 thick leeks, cut in small pieces

  • 1 tbsp. fennel seeds

  • ½ tsp. salt

  • 1 tsp. black pepper

  • 2 tbsp. ghee

  • To garnish: pinch of chilli pepper (flakes)


Bring the water to the boil and add the potatoes. Cook for 10 minutes and mix with a blender until smooth. Add leek and remaining ingredients and cook for another 20 minutes. Blend again, but do not blend all leek pieces. Garnish with chilli pepper flakes or coarsely ground pepper.
